In India, a chowk is a crossroads. It is the square where four streets meet, where flower sellers share air with clay ovens, where a grandmother's chaat stall lives two doors from a wedding caterer. The city's noise + its hunger collect there.
We built The Chowk in Bali so guests could stand inside that feeling. Not a restaurant in the strict sense — a gathering square. Charcoal, cardamom, marigold, a brass bell. The hand-rolled naan lands while someone across the room is being served a dessert from a lineage older than most countries.
Three addresses. One idea. Food as memory, ritual, celebration + connection.

The Chowk was founded in 2024 by Ibu Pooja — classical Indian dancer, yoga practitioner + cultural ambassador — alongside her partner Pak Pawan.
Pooja grew up moving between stage + kitchen, between the precision of a mudra + the improvisation of her grandmother's chulha. When she moved to Bali, the one thing she could not find was an Indian room that felt like home → so she built three of them.
The kitchen is led by Chef Dhoom Singh, 25+ years across heritage Indian cuisine, supported by Chef Suresh [20 years in Indonesia, chaat + dessert specialist] + a bench of six more named cooks. Every recipe is traceable. Every spice blend is ground in-house.
